Drue Brandenburg is a Certified Executive Chef and a Certified Culinary Educator. In addition to being the owner and principal sculptor for the Miami Iceman, he is an associate Professor in the College of Culinary Arts at Johnson & Wales University, in North Miami, Florida. With nearly twenty years of ice sculpting experience, Drue can create everything from traditional wedding sculptures to the contemporary style of ice martini bars and vodka shot slides, also known as “Ice Luges”. Corporate events can be taken to the next level with snow filled inscriptions and colorful inlays of company emblems, displayed on sculpted ice pedestals in lighted trays. All the ice is hand carved to the specifications of your event so the customer’s desires are never constrained by available designs that rely on molds.
Founded in 1997, the Miami Iceman began producing ice sculptures for area caterers and hotels. As word began to spread, we were fortunate enough to get the orders for the World Series VIP tents at Pro Player Stadium. From that point on, we began servicing the finest establishments in South Florida. Clients include the Hotel Intercontinental Miami, the Hyatt in Coral Gables, the Delano in South Beach, Indian Creek Country Club, the JW Marriott Hotel, the Biscayne Marriott Hotel and the Biltmore Hotel.
